Chocolate, chocolate chip cookie cake recipe


Happy Thursday, everyone! 

During this lock-down, I see that people have been baking a lot more. I know I have! My cookie cake recipe is such a great option for when you want to make cookies, or a cake, but it feels like too much effort.

This is the best of both worlds and it's SO EASY and QUICK to make. It's deliciously crisp on the outside, and soft in the middle.

Chocolate, Chocolate Chip Cookie Cake (EASY)Prep Time: 10 minutes

INGREDIENTS

  • 3/4 cup unsalted butter, at room temperature
  • 3/4 cup light brown sugar
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 2 tsp vanilla extract
  • 3-4 tablespoons of milk (dairy-free milk is also fine for this)
  • 2 cups all purpose white flour
  • 1/4 cup unsweetened cocoa powder for baking 
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup of chocolate chips

INSTRUCTIONS

1. Preheat your oven to 180C/350F and grease a 9 inch cake pan.

2. Add the butter and sugars to a mixing bowl and beat together to cream them until fluffy. Manually, this will take 3-4 minutes. With a mixer, it should be no more than a minute or so.

3. Add the egg and vanilla extract and combine.

4. In a separate bowl, combine the flour, cocoa powder, baking soda, baking powder and salt.

5. Add the dry ingredients to the wet mixture little at a time until fully combined.

6. If the mixture is a bit on the dry side, now is the time to add the tablespoons of milk one at a time so that there's not a crumble texture. The mix should be very thick at this point, but not crumbly.

7. Fold in the chocolate chips but don't over mix the dough. Save some chips for garnishing the top!

8. Spread the dough evenly into the greased cake pan. Then put the extra chips on top.

9. Bake for 15 mins on 180C if you have a fan-assisted oven. If you have a regular oven, bake for 17-18 mins.

10. Remove from oven and allow to cool completely on a rack if you have one before cutting into it - 1 hour should be enough time.

11. EAT IT! :)
